Who would have thought that you could make a creamy, decadent healthy chocolate mousse? Well, by using avocado, you can! Thousands of people have made this recipe and told me they can’t believe how delicious it is.

INSTANT CHOCOLATE AVOCADO MOUSSE

Serves 6
Prep: 10 minutes

Ingredients

  • 150g good-quality dark eating chocolate (at least 70% cocoa solids) broken into pieces
  • 2 ripe small to medium-sized or 1½ large avocados
  • 1/3 – 1/2 cup milk (e.g. cow’s, almond, rice, oat)
  • 1–2 tablespoons liquid honey, pure maple syrup or agave nectar to taste

To serve:

  • 1/4 cup per serving fresh or frozen berries, defrost if frozen

METHOD

Melt chocolate in a double boiler or in a glass bowl set above a saucepan of simmering water (make sure the water does not touch the bottom of the bowl or the chocolate could overheat or become grainy). Stir a few times until melted.

Place avocado, milk and melted chocolate in a food processor and blend together until smooth. Keep adding a little more liquid until the mousse is very smooth and light. Blend in honey, maple syrup or agave to taste.

Spoon into serving glasses and serve immediately. Garnish with berries.

TIP: Use the best quality chocolate you can afford – the better the quality, the better the flavour of the mousse.
